BANAO Malti Grain Khichadi

To make Malti grain khichadi, you will need the following ingredients:

  • 1 cup mixed grains (rice, moong dal, toor dal, chana dal, quinoa, barley, wheat, oats)
  • 2 cups water
  • 1 cup diced vegetables of your choice (carrots, peas, beans, etc)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt, to taste
  • 2 tablespoons ghee or oil
  • 1/4 cup chopped cilantro for garnish

Instructions:

  1. Rinse the mixed grains and lentils in water and drain.
  2. Heat ghee or oil in a large pot or a pressure cooker over medium heat. Add cumin and mustard seeds and cook until they start to pop.
  3. Add the diced vegetables and sautรฉ for a few minutes until they start to soften.
  4. Add the mixed grains, lentils, turmeric powder, coriander powder, cayenne pepper, and salt to the pot. Stir to combine.
  5. Add 2 cups of water and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot and let it simmer until the grains and lentils are cooked through and the water is absorbed.
  7. If using pressure cooker, cook for 2-3 whistles.
  8. Once done, turn off the heat and let it sit for a few minutes.
  9. Garnish with chopped cilantro and serve hot.

You can also add some more vegetables of your choice and also adjust the spices as per your taste.
