Here is a recipe for a Beetroot Flavored Chilla:

Ingredients:

  • 1 cup of chickpea flour
  • 1/2 cup of grated beetroot
  • 1/4 cup of finely chopped vegetables (optional) such as bell pepper, onion, or spinach
  • 1/4 cup of cilantro, chopped
  • Salt and pepper to taste
  • Water, as needed
  • Oil or butter for cooking

Instructions:

  1. In a mixing bowl, combine the chickpea flour, grated beetroot, chopped vegetables, cilantro, salt and pepper. Mix well.
  2. Slowly add water to the mixture, stirring constantly, until a smooth batter is formed.
  3. Heat a non-stick pan on medium heat, add oil or butter.
  4. Pour the batter on the pan and spread it evenly to make a thin chilla.
  5. Cook until the bottom is golden brown and flip to cook the other side.
  6. Cook the other side until golden brown and then remove from the pan.
  7. Serve hot with chutney or sauce of your choice.

Note: You can add some more grated beetroot on top of the chilla before serving for a more intense beetroot flavor. The chickpea flour gives a good source of plant-based protein and the beetroot adds a nice earthy flavor and color to the chilla.
