BANAO Malti Grain Khichadi

To make Malti grain khichadi, you will need the following ingredients:

  • 1 cup mixed grains (rice, moong dal, toor dal, chana dal, quinoa, barley, wheat, oats)
  • 2 cups water
  • 1 cup diced vegetables of your choice (carrots, peas, beans, etc)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt, to taste
  • 2 tablespoons ghee or oil
  • 1/4 cup chopped cilantro for garnish

Instructions:

  1. Rinse the mixed grains and lentils in water and drain.
  2. Heat ghee or oil in a large pot or a pressure cooker over medium heat. Add cumin and mustard seeds and cook until they start to pop.
  3. Add the diced vegetables and sauté for a few minutes until they start to soften.
  4. Add the mixed grains, lentils, turmeric powder, coriander powder, cayenne pepper, and salt to the pot. Stir to combine.
  5. Add 2 cups of water and bring the mixture to a boil.

You can also add some more vegetables of your choice and also adjust the spices as per your taste.
