HOW TO COOK

  • 1 cup mixed lentils (such as moong dal, masoor dal, and toor dal)
  • 1 cup rice
  • 2-3 cups water
  • 1 tsp ghee or oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • Salt, to taste
  • Optional: diced vegetables such as carrots, peas, or potatoes
  • Optional: Whole spices such as bay leaves, cinnamon sticks, cloves, and cardamom
  • Optional: minced ginger and garlic

Instructions:

  1. Rinse the lentils and rice in a fine mesh strainer until the water runs clear.
  2. In a pot or pressure cooker, heat ghee or oil over medium heat. Add cumin seeds and mustard seeds and let them crackle.
  3. Add the whole spices if using, and let them sizzle for a few seconds.
  4. Add minced ginger and garlic if using and sauté for a minute.
  5. Add the rinsed lentils and rice to the pot and stir.
  6. Add 2-3 cups of water, turmeric powder and salt to taste.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  8. Cook until the lentils and rice are tender, about 20-25 minutes in a pot or 10-15 minutes in a pressure cooker.
  9. If using vegetables, add them in the last 5-7 minutes of cooking.
  10. Remove from heat and let sit for a few minutes before serving.
  11. Serve hot with yogurt or ghee on top, if desired.

Note: Cooking time and water measurement may vary depending on the type of lentils and rice used. Adjust accordingly to ensure the khichadi is cooked through but not mushy. Adjust the spices and seasoning as per your taste.
